The Millenium Cookbook- Chickpea Flat Bread
I cannot find documented evidence that is an actual error, however, I can’t see how it is not. In The Millenium Cookbook the Chickpea Flat Bread recipe uses a ratio of 2 cups of flour to 4 cups of water with more water “as needed” and calls for a cooking time of 15 minutes. The “dough” was as liquidy as soy milk and after 50 minutes still not cooked through. I remade the recipe using 2 cups of flour to 1.5 cups of water and it cooked in 15 minutes this time and looked more like what I was expecting. It is fairly dense though and I am not sure how dense it should be. I might play with this more in the future.
