Nicole’s Arugula Basil “Pesto”
3 cups fresh basil
6 cups arugula
1/2 cup Parmesan
1 Tbsp olive oil
garlic cloves to taste (I use around 9)
For a batch this large, add items to a food processor and pulse until well blended.
For a more traditional preparation, blend smaller amounts of ingredients with a mortar and pestal in similar proportions until you have the desired amount.
Unused portions can be frozen. If leaving in the refrigerator, use within a few days.
